Only one product on our shelves is labelled lectin free by its maker: Almond Road's Lectin Free loaf. Everything else people buy for lower-lectin eating is chosen because it appears on Dr Steven Gundry's food lists. Here's who he is, what the research shows, and what we stock from his lists across our flours, pasta and dairy.

Who Dr Gundry is, and what he argues
Dr Steven Gundry is an American cardiac surgeon who wrote The Plant Paradox. He argues that lectins, proteins found in grains, legumes and some vegetables, drive inflammation and weight gain. He publishes yes and no shopping lists that many readers shop from. He also sells his own range of supplements.
His yes list includes cassava, tapioca, coconut and almond flours, the grains millet and sorghum, A2 dairy, goat butter, and goat and sheep cheese. His no list includes beans, lentils, chickpeas and regular cow's milk products containing A1 casein.
What the research says
According to the Harvard T.H. Chan School of Public Health, lectins are proteins that bind to carbohydrates. They're found in all plants and are highest in raw legumes and whole grains. Boiling, stewing and soaking inactivate most of them, and canned beans are low in lectins because they're cooked in the can.
Harvard also flags a real risk: raw or undercooked kidney beans contain a natural toxin that causes vomiting and diarrhoea, so dried ones need a proper soak and a hard boil.
On long-term effects, Harvard notes there is very little human research, and adds that large population studies link legumes, whole grains and nuts with lower rates of heart disease and type 2 diabetes. Many dietitians disagree with Dr Gundry for these reasons. If you're thinking of cutting out whole food groups, talk to your doctor or an Accredited Practising Dietitian first.
What "lectin free" means on a label
Australia's Food Standards Code sets rules for nutrition and health claims under Standard 1.2.7, and "gluten free" has a defined meaning. "Lectin free" doesn't, so we only use the words where the maker does.
Grain free isn't the same thing either. The Naturis Grain Free loaf is made with buckwheat and chickpea flour, and both are on his no list.
What we stock
The labelled loaf
Almond Road bakes in Mullumbimby. Its Lectin Free loaf is gluten free and vegan, made with almond meal, coconut and linseed flours, tapioca and psyllium. It contains almonds. The rest of the Almond Road range isn't labelled lectin free.

Sorghum and millet
We carry Ceres Organics spaghetti and spirals, and our sorghum pasta guide covers cooking it. For baking there's Honest to Goodness White Sorghum Flour, milled from Australian-grown sorghum.
Chef's Choice Hulled Millet cooks light and fluffy or creamy, depending on how much water you use; toasting it in a dry pan first gives it a nuttier flavour. Honest to Goodness Organic Hulled Millet is Australian grown and cooks without soaking.
Cassava, tapioca and coconut flours
Cassava flour is the whole root, dried and ground, while tapioca is just its starch. Cassava behaves differently from wheat, so recipes written for it work best. Lotus Cassava Flour is packed in a facility that also handles peanuts, tree nuts, milk, soy, sesame, lupin and gluten. Honest to Goodness Cassava Flour is sold as nut free. Chef's Choice Tapioca Flour adds stretch to grain-free baking. Chef's Choice Coconut Flour soaks up liquid, so recipes usually need extra egg or water.
A2 and goat dairy
Meredith Dairy Fresh Chevre is a soft, spreadable goat's cheese made in Victoria from pasteurised milk. Caldermeade Farm Goat Butter is pasteurised goat cream and a pinch of salt. A note on raw milk: Made By Cow's milks, including its Cold Pressed Raw Jersey Milk, are treated with cold high pressure rather than heat, and Cranley Dairy Co.'s Fresh Raw Goats Milk is sold unpasteurised. Unpasteurised milk carries food safety risks, which the NSW Food Authority explains.
If you still eat beans
Ceres Organics Mixed Beans are cooked in water with nothing added, and the same range includes chickpeas.
Storing grain-free flours
Almond meal and coconut flour contain more fat than wheat flour. Keep them sealed, and in the fridge over summer if you have room. Cassava and tapioca are fine in a cool, dry cupboard. Our flour-by-flour guide helps with swaps.

Can I get these delivered?
Yes. Our van has a fridge on board, so the dairy arrives cold. It runs Monday to Saturday from Leichhardt, with no minimum order; see our delivery page for areas and fees.
