Grain-free bread: what's in it, and the loaves we stock

Grain-free bread is bread made without wheat, rye, rice, corn or any other cereal grain. Most loaves use almond meal for body, tapioca for stretch, and psyllium or linseed to hold it together. We keep a small range on our gluten-free bread shelf, most of it from Almond Road in Mullumbimby.

How it differs from gluten-free bread

Most gluten-free bread still contains grain. Take the wheat out and bakers usually add rice, corn or sorghum flour instead. Grain-free bread skips that step, so it eats differently: denser, moister and closer to a seed loaf than a sandwich loaf.

"Grain free" describes the ingredients, not a health benefit. If you avoid gluten and miss bread with some substance, it's worth trying. If you're buying it because it sounds healthier, the case is weaker. Whole grains have a long track record in large population studies, as the Harvard T.H. Chan School of Public Health sets out.

How to eat it

  • Toast it. Nut-based loaves firm up and taste better warm.
  • Cut thin slices. It's dense, so a thin slice goes further.
  • Pair it with something rich or salty: avocado, a soft-boiled egg, goat butter or a bowl of soup.
  • If you won't finish a loaf in a few days, freeze it in slices and toast straight from the freezer.

All the Almond Road loaves above contain almonds, and the seeded loaf has sesame. Almond Road's Banana & Walnut loaf isn't in the table because it contains brown rice flour, so it isn't grain free. Naturis is certified organic by ACO and made with chickpea flour, so skip it if you avoid legumes.

Quick questions

Is grain-free bread gluten free?

Every loaf above is sold as gluten free, but the terms mean different things. In Australia "gluten free" is a defined label claim meaning no detectable gluten, while "grain free" simply describes what's in the loaf.

Is buckwheat a grain?

Not botanically. Buckwheat is the seed of a plant related to rhubarb, which is why a buckwheat loaf can be sold as grain free.
