Sorghum pasta is gluten-free pasta made from a single grain. The two we stock from Ceres Organics, Sorghum Spaghetti and Sorghum Spirals, each list one ingredient: organic sorghum. Sorghum is also on Dr Steven Gundry's lower-lectin yes list.
What sorghum is
Sorghum is a cereal grass grown for its grain in hot, dry country. Like rice and corn it's naturally gluten free, which is why food researchers have been testing it for gluten-free pasta. It's farmed in Australia too: Honest to Goodness White Sorghum Flour is milled from Australian-grown white sorghum.
How it cooks
Gluten gives wheat pasta its bounce, so a pasta made only from sorghum relies on the grain's starch instead. Expect a softer bite and a mild, slightly sweet flavour. A few habits help:
- Use a big pot of well-salted water, and stir in the first couple of minutes so it doesn't clump.
- Go by the time on the pack, but start tasting two minutes early. Gluten-free pasta turns soft quickly.
- Keep a cup of cooking water before you drain. A splash helps the sauce cling.
- Sauce it straight away, and don't rinse it.
How it compares with other gluten-free pasta
Most gluten-free pasta is made from rice and corn, or rice and quinoa. Those are neutral in flavour and a good everyday swap. Pastas made from lentils or chickpeas carry far more protein but taste of the bean, and legumes are on Dr Gundry's no list. Sorghum sits in between: one grain and a gentle flavour.
A quick weeknight bowl
While the spirals cook, warm sliced garlic and a pinch of chilli in olive oil. Add a big handful of chopped kale or silverbeet and let it wilt. Toss in the drained pasta with a splash of the cooking water, a squeeze of lemon and grated parmesan or pecorino. It takes about as long as the pasta does.

Quick questions
Is sorghum pasta gluten free?
Sorghum is naturally gluten free, and both Ceres Organics pastas are sold as gluten free. If you have coeliac disease, check the allergen statement on the pack.
Is sorghum on Dr Gundry's yes list?
Yes. Sorghum and millet are the grains his published lists allow. The research on lectins doesn't back his case, and our guide to lower-lectin eating sets out both sides.
