Boneless swordfish from The One That Got Away, skinless and cut into steaks. Swordfish is dense and close-grained with very little flake, and it behaves more like a piece of meat than a fillet of fish.
Cook it like a steak: hot grill or hot pan, a few minutes a side, rested briefly, served a little pink in the middle. Cooked all the way through it goes dry. Olives, capers, tomato and oregano are the classic partners.
