Rainbow trout from The One That Got Away. It has soft pink flesh, a fine flake and a mild, faintly nutty flavour that sits somewhere between salmon and a delicate white fish.
It suits simple cooking — grilled or baked whole, or fried in butter with almonds and lemon. It is also very good smoked or cured if you like a project.
