Boneless monkfish fillets from The One That Got Away, skinless and trimmed. Monkfish is dense and meaty with almost no flake, which is why it is so often compared to lobster or scampi.
It stands up to real cooking — roast it in one piece, cut it into medallions and sear them, or put it into a stew or curry where a softer fish would break down. Give it a little longer than you would a white fillet.
