Gemfish from The One That Got Away. Gemfish has soft white flesh with a higher oil content than most white fish, which gives it a richer flavour and keeps it moist.
It is well suited to the grill and to the barbecue, and it smokes beautifully. Keep the seasoning simple — salt, lemon, maybe a little butter — and take it off just before it firms up completely.
