Spanish mackerel fillets from The One That Got Away, packed in extra virgin olive oil with a little salt and nothing else. The olive oil carries a Spanish organic certification (CAEE, ES-AN-00-AE).
Mackerel is an oily fish with firm, dark-edged flesh and a full flavour. Lift the fillets out of the oil and put them straight onto toast with lemon, through a potato salad, or into pasta with chilli and parsley. The oil left in the jar is worth keeping for dressing.
