Flathead fillets from The One That Got Away. Flathead is a mild, lightly sweet white fish with fine flakes and very little fat, which is why it has always been the classic choice for fish and chips.
It cooks in minutes. Dust the fillets in seasoned flour and shallow-fry them, crumb them, or grill them quickly and finish with lemon. They also hold together well in fish tacos.
