Bream fillets from The One That Got Away. Bream has firm white flesh with a clean, mild flavour and a fine flake, and the fillets are a good size for one person each.
Cook them simply. Dust in seasoned flour and pan-fry, grill them skin on until the skin crisps, or bake them with lemon and butter. They also crumb well.
