Slice it into rounds or batons for the barbecue, cut it into ribbons for salads, roast it with olive oil and herbs, or spiralise it. It cooks quickly, so keep an eye on it.
Keep it in the crisper drawer of the fridge and use it within about a week. Wash before use.
