Heirloom varieties are open pollinated and come in a range of colours, shapes and sizes, from striped to deep purple to yellow. They are best eaten fresh, sliced into salads, piled on toast, or dressed with olive oil and salt.
Keep them on the bench out of direct sun rather than in the fridge, which dulls the flavour and softens the texture.
