The flesh is orange, soft and sweet once ripe. A ripe melon smells sweet at the stem end and gives a little when pressed. Cut it into wedges or cubes, or blend it.
Keep a whole melon on the bench until it ripens, then move it to the fridge. Once cut, cover it and keep it refrigerated.
