Miellerie Tea Tree Honey, 900g. Tea tree (Leptospermum lanigerum and Leptospermum scoparium) is the same genus as New Zealand manuka. Miellerie's comes from along the upper Huon River and Manuka Creek, in the World Heritage wilderness of South West Tasmania.
It is a deep amber, with a pronounced taste nothing like a mild blossom honey, and a thick texture built from soft fine crystals rather than a smooth syrup — it spreads more than it pours.
Extracted and packed at hive temperature, unheated. Each season's harvest is tested for methylglyoxal and the level shifts from year to year, so the figure printed on the jar is the one that applies to that jar.
Available at Leichhardt and Crows Nest, or for Sydney delivery.
