Miellerie Leatherwood Honey, 900g. Leatherwood (Eucryphia lucida and Eucryphia milliganii) grows in Tasmania's World Heritage rainforest and almost nowhere else, which is why leatherwood is the honey most people mean when they say Tasmanian honey — pale, thick and strongly floral, closer to perfume than to a standard blossom honey.

The jar is labelled organically produced, cold extracted, unheated, unprocessed, pure raw honey. Miellerie extract and pack at hive temperature, which keeps the texture soft and creamy rather than runny and leaves the natural crystals in.

This is the big jar, for people who go through honey. It is good on toast and porridge, and strong enough to hold its own with cheese or in a dressing where a milder honey would disappear.
