Harris Smokehouse Wild Salmon Burgers, two burgers of 125g each, frozen.

Made from wild caught Alaskan sockeye. The brand's own line on them is the whole selling point: all natural, with no binding agents, no additives and nothing artificial. Most fish burgers lean on breadcrumb, egg or starch to hold together — these are salmon held together by the salmon.

Cook them from frozen. A hot pan with a little oil, a few minutes a side, until they colour and firm up; they also work on a barbecue plate or under a grill. Because there is no filler they are leaner than a standard fish patty, so do not overcook them.

Bun, lettuce, a squeeze of lemon and something sharp — pickles, capers, a mustard mayonnaise. They are also good broken over a salad.
