The Canadian Way Wild Raw Sockeye Salmon, 150g. A single frozen portion of 100% wild North American sockeye, skin on and bones removed. Product of Canada.
The Canadian Way draw a distinction worth understanding. Their salmon is, in their words, “100% Wild, not Wild Caught (Hatchery) or Farmed”. Hatchery fish are raised in tanks and released to be caught later; farmed Atlantic salmon never leaves the pen. Sockeye runs wild for its whole life, which is why the flesh is that deep red and why it is leaner and firmer than farmed salmon.
Because it is lean it wants a short cook. Sear it skin-side down in a hot pan and pull it off while the centre is still translucent, or roast it briefly. Cooked all the way through it goes dry. If you intend to eat it raw, check the pack first.
