Salmon caviar is not sturgeon caviar and does not pretend to be. The eggs are large, bright orange and translucent, and they burst rather than melt — a clean pop of salt and sea rather than the mineral depth of a sturgeon roe. It is also a fraction of the price.

Serve it cold and simply. On blini with sour cream, over a boiled egg, on buttered brown bread, or spooned over cold noodles. Use a plastic, horn or mother-of-pearl spoon if you have one; metal can catch the flavour. Add it to anything warm at the last second, off the heat, or the eggs will seize and go tough.
