The leaves are looser and more tender than a drumhead cabbage and the flavour is milder and slightly sweet. Sold whole.
Shred it raw for slaw, wilt it quickly in a pan with butter or olive oil, add it late to a stir fry, or braise wedges slowly with stock. The thin leaves cook faster than a standard cabbage.
Keep it whole in the crisper drawer of the fridge, where it will hold for a week or more. Once cut, wrap the rest and use it within a few days.
