Blue Bay make it with non-homogenised milk from certified organic, grass-fed herds in Gippsland, collected by their own driver and turned into cheese within hours of milking. Their quark won awards at the Royal Melbourne Show in 2013 and 2014. Kosher certified. Used in cheesecakes and baking, stirred into dips, or simply spread on bread. Keep refrigerated.
