No-Bake Peanut Butter Cheesecake

Ingredients:
Base Layer:
- ½ cup organic roasted peanuts
- 1 cup (96g) organic coconut flour
- 3 tbsp organic cacao powder
- 3 tbsp organic pure maple syrup
- 2 tbsp organic coconut oil, melted
- ½ tsp organic Celtic sea salt
Cheesecake Layer:
- 1½ cups organic roasted peanuts
- ½ cup organic full-fat coconut milk
- 2 tbsp organic coconut oil, melted
- ⅓ cup (111g) organic pure maple syrup
- ½ cup (128g) organic creamy peanut butter
- 1 tsp organic vanilla extract
- ½ tsp organic Celtic sea salt
Topping:
- 100g organic dark chocolate, melted
Method:
- Base: Blend all base ingredients until crumbly. Press into jars.
- Filling: Blend cheesecake layer until smooth. Pour over base. Chill 2 hours.
- Topping: Melt chocolate, pour over cheesecakes, chill 15 mins.
