Kingfish from The One That Got Away. Yellowtail kingfish has firm, meaty flesh and a clean, slightly rich flavour that stands up to strong seasoning far better than most white fish.
It is at its best cooked hard and fast — grilled or seared in thick pieces and pulled off while the centre is still just translucent. It also takes well to a soy, ginger and lime marinade, or to a slow roast on the bone.
