This vibrant raspberry smoothie bowl, which I call "Berry Genius," is an explosion of fresh, tangy flavors that's sure to become a new breakfast (or anytime) favorite. It's a delicious way to pack in nutrients from nutrient-dense ingredients like raspberries, banana, cashews, and yogurt. Plus, it's an absolute breeze to whip up!
Serves: 2 small bowls Preparation
Time: 5 minutes
Ingredients
- 1/2 cup fresh or frozen raspberries
- 1 fresh or frozen banana
- 1/2 cup roasted cashews
- Juice from 1 lemon
- 1/2 cup plant-based milk
- 1/2 cup unsweetened plant-based yogurt
- 1 tbsp maple syrup or agave nectar (optional, to balance tartness)
Toppings
- Fresh strawberries
- Granola
Instructions

In a blender or food processor, combine the raspberries, banana, cashews, lemon juice, milk, yogurt, and maple/agave syrup (if using).

Blend until smooth and well-combined. The mixture will turn a beautiful, vibrant pink color.
